Prawns Fry (Royyala Vepudu)



 Ingredients
 
  • Prawns - 250g
  • Onions - 1
  • Oil - 3 tsp
  • Mustard seeds - 1/4 tsp
  • Curry leaves
  • Turmeric powder - 1/4 tsp
  • Red chilli powder - 1 tsp
  • Salt to taste
  • Garam Masala
  • Dhaniyala podi (Coriander powder)
  • Coriander leaves
  • Water - 1/2 cup


Procedure

  • Take a cooking bowl, add oil.
  • Add mustard seeds (aavaalu), curry leaves, and onions.
  • Add prawns, salt, turmeric powder, and chilli powder.
  • Add a little bit of garam masala
  • Add water and mix the ingredients properly. Heat for 15-20 minutes till the prawns are cooked properly.
  • Add dhaniyala podi (Coriander powder) when there is little water left in the bowl. Heat it for a couple of minutes.
  • Finally add coriander leaves before serving

Pappu / Tur Dal


Ingredients:


  • Tur dal - 1/2 cup
  • onion - 1
  • tomato - 1
  • red chillies - 2
  • green chillies - 3
  • mustard seeds - 1/4 tsp
  • oil - 2 tsp
  • curry leaves - a few
  • tamarind pod - 1
  • turmeric powder - a pinch
  • salt to taste
  • water - 1 1/2 cup (three times the quantity of dal)


Preparation:


  • Clean Tur Dal with water and put into the cooking vessel or pressure cooker.
  • Cut onions, tomato, and green chillies into small pieces and add them to Dal.
  • Then add turmeric powder, tamarind pod, and pour water.
  • Heat the contents until you get 3 whistles (if you are using pressure cooker)
    Heat the contents until the dal becomes tender (if you are using a cooking vessel)
  • Leave it for 5-10 minutes until the heat reduces a bit
  • Now mash the contents in the vessel or pressure cooker and add salt
  • Take a separate pan, add oil and heat it.
  • Add mustard seeds, red chillies, and curry leaves and heat it for a few seconds.
  • Finally add this to the mashed dal, heat it for 2-3 minutes, and serve it with hot rice.

Beetroot fry(vepudu)


Ingredients:

  • beetroot – 2
  • red chillies – 2
  • mustard seeds – 1/4 tsp
  • curry leafs – a few
  • chana dal – 1/4 tsp
  • oil – 3 tsp
  • chilli powder – 1/2 tsp
  • garlic – 4 flakes (roughly crushed)
  • turmeric powder – a pinch
  • salt to taste

Preparation:

  •   Take a pan, add oil, and heat it.
  •   Add mustard seeds, red chillies, curry leaves, chana dal, and garlic.
  •   Now add beetroot, then add salt, and turmeric powder.
  •   At last add chilli powder, then serve it.

    Perugu Pulusu / Majjiga Charu



    It is very easy to prepare this dish and it does not take much time. The main ingredient in this dish is curd/yoghurt. The sourness of curd, crispy onions, and spicy chillies give it a very delicious taste.

    Ingredients
    • Curd - 2 cups
    • Oil - 2 spoons
    • Mustard seeds - 1/4 tsp
    • Urad dal - 1/2 spoon
    • Curry leaves - few
    • Onions - 1
    • Garlic cloves - 3 (crushed)
    • Green chillies - 3
    • Red chillies - 2
    • Turmeric powder - a pinch
    • Salt - to taste
    • Water - 1 cup

    Preparation
    1. Add water to curd and prepare buttermilk. Add salt and stir it nicely.
    2. Cut the onion into small pieces.
    3. Heat oil in a pan and add mustard seeds, urad dal, and curry leaves
    4. Add onion pieces, crushed garlic cloves, cut red chillies and green chillies. Fry them till it turns brown
    5. Now add a pinch of turmeric powder and heat it for a few more seconds.
    6. Finally add this to the buttermilk and your "perugu pulusu" is ready to serve.
